Spicy Corn Chowder

It is finally warming up around here and starting to feel like spring! There is still enough chill in the air to make it perfect soup weather in the East. I am going to try to make soup for the next couple weeks before really starts warming up.

The secret ingredient at our house for this soup is Cholula. Hot sauce is the new ketchup for my children. They put it on everything! It really gives this soup a kick.

This is fast, go to dinner. I have no picture of this soup. You will just have to imagine its deliciousness or make it yourself!

Corn Chowder

2 - 15 oz. cans corn
1 1/2 cups potato, peeled and cubed
1 cup onion, finely chopped
1 cup water
6 cubes chicken bullion
3/4 tsp. red pepper
4 1/4 cups milk
3 T. butter
6 T. flour
Ham or Sausage. if desired

In a large saucepan, combine corn, potato, onion, water, bouillon cubes, and pepper. Bring to a boil, reduce heat. Cover and simmer, about 10 minutes or until potatoes are just tender, stirring occasionally. 

Stir in 3 1/4 cups milk and butter. Combine remaining 1 cup milk and flour. Stir mixture into soup to thicken. Cook and stir until thick and bubbly.
