Spiral Ham = 12 meals for 5 people

I bought a spiral ham on sale after the holidays for $19 dollars and so far it has fed our family of 5 eight times! We had three meals with ham, potatoes, and veggies. We had two meals as sandwiches with provolone cheese. We had two meals with corn chowder. The eighth meal was Potato Bean Salad. Originally posted 1/19/12, I wanted to share this again because it is economical and you can freeze this recipe. The picture below shows me making this recipe with sausage, but this time I used ham.
This spiral ham is going to feed us at least 4 more times when I make Pea Soup. That will be 12 meals for 5 people! Including the other ingredients for these meals, these 12 meals would cost about $55.00. I am estimating these numbers, but that would mean each meal would cost $4.50 per meal and about 80 cents per person! That is economical!

Caramelized Potatoes

2 lbs. small new potatoes, quartered
2 T. olive oil
¼ cup sugar
½ tsp. salt

Cook potatoes in boiling salt water until tender, about 10 to 15 minutes. Drain. In large frying pan, heat olive oil. Add sugar and cook until melted, stirring constantly.

Add potatoes and salt. Stir while cooking until potatoes are browned and caramelized. Serve immediately. 

Potato Bean Salad

One recipe of Caramelized Potatoes, cooked and diced

1 15 oz. can corn
1 15 oz. can black beans
1 15 oz. can diced tomatoes, drained
1 cup ham or sausage

Combine ingredients. Season to taste. Serve hot or cold.
