Potato Bean Salad

I know there are 1001 ways to put potatoes, corn, beans, and tomatoes together. That is the great thing about some of these basic foods, none of the flavors are to overpowering and they can be interchanged in different ways. The more knowledge we have about how to prepare food, is like the more tools in our kitchen. It will give us confidence on how to bring a delicious meal together. My husband had taught me about throwing things together from his Australian upbringing and their tradition of "Bubble and Squeak." This recipe is our own creation of how to put these basic foods together in a delicious way. First, make the "Caramelized Potatoes" recipe and then follow the directions in the "Potato Bean Salad" which is simply mixing all the ingredients together. Enjoy!

Caramelized Potatoes

2 lbs. small new potatoes, quartered
2 T. olive oil
¼ cup sugar
½ tsp. salt

Cook potatoes in boiling salt water until tender, about 10 to 15 minutes. Drain. In large frying pan, heat olive oil. Add sugar and cook until melted, stirring constantly.

Add potatoes and salt. Stir while cooking until potatoes are browned and caramelized. Serve immediately.

Potato Bean Salad
One recipe of Caramelized Potatoes, cooked and diced

1 15 oz. can corn
1 15 oz. can black beans
1 15 oz. can diced tomatoes, drained
1 cup ham or sausage

Combine ingredients. Season to taste. Serve hot or cold.
