Horchata Chill

At our house, powdered milk is not a favorite. In fact, my husband hates powdered milk. There are very few recipes I can even sneak in powdered milk as an ingredient. I have been on the hunt for an alternative to powdered milk for our short term storage. Last month, before the hurricane, we bought some Rice Dream so that if we lost power, we could still have milk. My husband now prefers Rice Dream to milk on his cereal.

Rice Dream does not have to be refrigerated before it is opened and will last up to a year. It is non-dairy and enriched with vitamins A, D & B12. It is gluten free, soy free, organic, shelf stable, has the same calcium as milk, is low fat and all natural! This has been useful when we run out of milk, we will just grab a box of rice dream and use that until we can run to the store. An added benefit to using Rice Dream in an emergency is that you don't have to use up your water storage to make it (unlike powdered milk).

I also make a drink we have named the "Horchata Chill." It's super simple and very refreshing.

Horchata Chill

25 fl. oz. Rice Dream
12 fl. oz. Evaporated Milk
1 1/2 cup ice
1/2 cup sugar
2 tsp. vanilla

Place all ingredients in a blender. Blend until well combined. Serve immediately. Enjoy!

drink rice too, plain, for the last year, to decrease by dairy intake. You are right, it is shelf stable and the best price I find is from Costco, so I buy it by the case.
