Wheat

This recipe is for those who have no grinder. This recipe is soooo good. My boys all love it. That is a good test for a recipe. It takes some preparation time, but well worth the nutritious breakfast!

Wheat Berry Pudding

1 cup wheat berries
2 T. milk
3 cups milk
1 tsp. cinnamon
Pinch of salt
½ cup pure maple syrup

Place what berries in a large saucepan and cover with water by 2 inches. Bring to a boil, then cover and simmer, about 1 hour, or until the wheat berries are tender. Stir often.

Add more water if necessary. Drain well. Place the wheat berries and 2 T. milk in a blender. Blend until most of the wheat berries are coarsely chopped.

In a large saucepan, combine 3 cups milk, wheat berries, cinnamon, salt, and bring to a boil. Reduce heat to medium-low and cook for 25 minutes or until mixture is thick.

Stir in maple syrup. Serve warm or cooled, sprinkled with cinnamon.
