For all of you that were brave enough to taste the samples at Super Saturday, here are the recipes. Probably not recipes that are in many food storage collections, but they use basic ingredients that could be found in your food storage. They are both recipes from the Philippines. Very easy to make. For those of you who weren't at super Saturday, the first recipe is like a coconut jello. The second is a very sweet treat.
2 ½ cups coconut milk
2 envelopes Knox gelatin
1 cup granulated sugar
½ cup water
1 cup evaporated milk
Dissolve gelatin in water. First add sugar and coconut. Cook over very low heat for 20 minutes. Do not let it boil. Add milk. Pour into an 8-inch square pan and cool. Chill.
½ cup sweetened condensed milk
2 cup powdered milk
1 egg yolk
1 T. butter, softened
1 cup sugar
Pour the condensed milk into a small saucepan. Cook on medium heat. Do not boil. In a bowl, beat egg yolk. Then, pour half of condensed milk and coconut cream and mix well.
Pour the egg mixture into the saucepan and continue cooking, stirring constantly. When the mixture thickens, turn off the heat and cool for about 5 minutes.
Place the powdered milk in a large mixing bowl. Add the egg mixture and butter. Mix well. Cover the bowl with cling wrap and chill for about 45 minutes.
Form into very small balls and roll in sugar. Repeat for the remaining mixture. Chill before serving.
